Grease interceptors, also known as grease traps, were first developed in the late 19th century. This simple technology works so well that their design and function has remained nearly unchanged since then. These traps are designed to catch fats, oils, grease and other food solids before they enter your wastewater system. For businesses like restaurants and hotels that produce food on a daily basis, these traps are necessary to prevent clogs in the wastewater system that can lead to costly repairs and shut downs.

Once a grease interceptor has been installed fats, oils and grease will begin to collect in the interceptor. This is known as “brown grease”. The interceptor is designed so that solids sink to the bottom and the fats, oils and grease float to the top. The brown wastewater will then be the only part that is pushed out of the interceptor into the wastewater system; leaving the fats, oils and grease behind to be pumped out.
